Valentines Day


The worldly renowned Valentines Day is fastly approaching, the day which we celebrate love. Valentines Day began with the Roman Empire which held the Lupercian Festival every February in honour of the God of fertility, where young men could choose their mate. During this time marriage was legal however, when Claudius became Emperor he changed the laws, fearing men would refuse their duty to fight because they would not want to leave their wives. When couples wished to get married in secret they would go to Catholic Bishop Valentine who would marry the couples. When Claudius found out he had Valentine arrested. While waiting in jail Valentine exchanged letters with his lover and on his final note before he got beheaded he signed it with: 'From Your Valentine'. This is where the traditional began.

This year we are providing a little SPICE for the lovers among you! We have spiced Valentines Cookies for those who like a little heat during the month of love, with cinnamon, chilli, salt and pepper to get the blood pumping.

Bakers' Wooden Smoothers Available Now


We have been very lucky enough to find someone to custom make (for us) some traditional Wooden Smoothers.

Wooden Smoothers are used by bakers for Cake Decorating. It is rare and almost impossible to find traditional Wooden types these days as most are made with plastic or other synthetic material. Plastic and other smoothers just don't cut it when it comes to decorating with precision.
Here is a picture of the Smoothers we have available for sale in our Ashgrove store.

RECIPE for Sweet Shortcrust Pastry

We have developed a simple and sweet recipe for Shortcrust Pastry and we thought our gift to you this Christmas is the secret recipe!


Ingredients
1 egg/ 55g
100g castor sugar
200g butter
300g plain flour

Procedure

  1. Cream butter and sugar lightly, add the egg then beat until well combined and creamy.
  2. Add flour and combine until well mixed.
  3. Then wrap in cling wrap and chill until firm, 24hours is always good.
  4. Roll out pastry to 4mm thickness.
  5. Cut the pastry with a cookie cutter to fit the size of your baking pan, pie tin or tartlet tin.
    If you are using the pastry for a large sweet pie, use a knife to cut the pastry to the correct size of your baking tin.
  6. Bake in 180 degree oven until golden brown
  7. Store in airtight container
  8. If using this pastry for Fruit Mince Tarts then par bake bases first then fill with your favorite fruit mince. You can then decorate the top by cutting out stars with your pastry.
    Brushing tops of the pies/tarts with a egg wash, sprinkle with castor sugar & bake until golden brown.

*Please note the reciple may vary for different sized baking trays.

December is here so I suggest you start practising your Fruit Mince Tarts before Santa arrives.

Brisbane Twestival 2009

At this year's Twestival held at the on the 11th of September in Woolloongabba, we donated six dozen cupcakes with procedes going directly to the Inspire Foundation Charity.

Twestival is an international movement where people meet offline for one night, have fun and do some good for an important cause in the process.

Christmas Cake Decoration

I have the perfect class for those people at Christmas time, who get a little stumped when it comes to preparing a delicious and appetising dessert for the family.
This Christmas Cake decorating class is a hands on experience in the kitchen and I will teach you how to decorate and ice a fruit cake. The cake will be iced with Pettinice icing and you will be given the choice to either decorate your cake with the classic holly wreath, holly with candles or christmas stars, which will all be hand made during the class. Making Sugar Roses, Leaves and Fillers

I have been around cakes my whole life and I have been making them for over 18 years! So I have set up some cake cooking and decorating classes so you can make beautiful looking cakes.
The first class will teach you how to make sugar roses, leaves and fillers giving you a hands on experience in the kitchen with me. You will be given a kit to work with and to take home so you can keep practising until you are satisfied. Read more on this class.

The second class is where you bring back your roses to be coloured, sprayed and arranged for placing on both mud and fruit cakes. Read more on this class.
